I like to use coconut milk in my smoothies, but I prefer where possible, not to buy it pre-made. When I started looking for ideas on the best way to make my own, I found these two how to make coconut milk videos very helpful.
How to Make Coconut Milk – The Quick Way
Coconut milk is made from the meat of the mature coconut. I find that the easiest way to make it at home is to use desiccated coconut. I generally use 1/2 cup of coconut for every 1 cup of water.
Add 1/2 cup of desiccated coconut and 1 cup of purified water into a blender. Blend for 2 minutes and then either drink or use it like it is or strain through a muslin or nut milk bag.

On The Stove
In this method, the water and coconut is warmed on the stove and then mixed with a hand mixer for five minutes. Thereafter it is strained through a muslin or nut bag.
I prefer the first method and like the 2 to 1 ratio of coconut to water. If like Klaire, in the second video, you like it less intense and more watery, then try a ratio of 4 to 1.
