Yummy Coconut Pie Smoothie – Perfect for a Healthy School Lunch

In the video below Laura Fuentes the founder of MOMables.com and the author of the best selling book “The Best Homemade Kid’s Lunches on the Planet” demonstrates how she packs a school lunch smoothie.
She shows us how she makes her Coconut Pie Smoothie. She then pours the smoothie into plastic freezer jars. She says that it is important to leave half an inch at the top for expansion. She then freeze them overnight.

Make the smoothie the night before and then in the morning pack the frozen smoothie into your child’s lunch box. It will remain cold until lunch time and as an added benefit it will keep the rest of your child’s lunch cold us well.
